Yogi Food: Easy Vegan Lunch


Hungry and lazy. It’s a problem.

Especially, when you are trying to eat healthy.

After trekking through the wind and cold on Abbey dog’s morning walk, I was about to throw in the towel for lunch by digging into some microwavable lasagna. 

My fingers still numb from the cold, I pulled out the lasagna thinking about the hot melted cheese and sauce that awaited.

It would only take a 5 minute jaunt around the microwave turntable. No dishes, warm meal, fast…Ah, comfort food.

What I did next surprised myself, I put back the lasagna :O

Maybe I could find something a little more healthy, I found myself saying.

I looked around the fridge, while my internal child was crying about the lasagna that was just sentenced to the freezer again.

I decided to make a warm salad.

No one really likes to eat salads in winter,

But a hearty, warm and juicy salad…perhaps.


What I love about this salad: takes 5 minutes (as much as microwavable lasagna), uses 1 frying pan, nutrient dense, and has PROTEIN.


My warm salad has 4 simple ingredients:

1/2 package of Trader Joe’s Chicken-Less Strips

2 handfuls of plum tomatoes

3 cups of spinach or kale

Seasonings: garlic power, italian seasoning, salt, pepper

Optional: parmesan cheese for non-vegans 🙂

Directions are super simple, too:

  • Put a tablespoon of olive oil into a frying pan.
  • Put chicken-less strips into pan.
  • Put halved plum tomatoes into pan.
  • Cook for 3 minutes until chicken strips are browned and tomatoes are soft.
  • Add a healthy dose of garlic powder, italian seasoning, pinch of salt and pepper.
  • Stir in greens and turn off heat. Y U M.

Easy and healthy with little mess.

Not exactly lasagna, but it was still damn good.

Plus: you can still say you ate a salad today.
