Yogi Eats: Chickpea Salad Sandwich

As a vegetarian, I'll admit I miss sandwiches the most (I'm including burgers in the sandwich category, and no-- I don't really miss bacon). Sandwiches are so easy to slap together. Deli meat and cheese on 2 slices of bread, spice it up with accouterment, and there's a perfect 5 minute lunch. However as a vegetarian making a sandwich, I end up spending 5 minutes deciding what the heck to even put on it. Tomato sandwiches are only good in the summer and don't even get me started on soy deli meats.

Solution: smashed chickpea sandwich. Like a tuna salad sandwich without the all the mercury or fish breath! Tip: make the night before so you can have chickpea salad sandwiches for a quick lunch during the week. I paired my sandwich below with an IPA 🙂
